Ingredients required _
1 1+1/2 cup poha (flattened rice), please take thick poha
2 1/2 teaspoon haldi
3 1/2 teaspoon lal mirch
4 1 teaspoon salt or according to taste
5 1/4 teaspoon musturd seeds
6 1/2 teaspoon salt
7 1 tablespoon musturd oil / any oil of preference
8 1/2 lemon juice
9 a small bunch of coriander chopped
10 1 small onion chopped
11 1+1/2 tablespoon raw peanuts
12 1green chilli, optional
13 12 curry leaves
14 1/2 cup potatoes cut in small cubes
15 1/3 cup peas or matar
16 1/3 cup carrot ( tastes good in poha)
The ingredients may appear many in quantity but all of them turn poha towards a tastier dish.
You can change the required ingredients according to your choice. Poha is a savory dish, it is given a sweet taste also with use of little bit sugar in it while cooking.
It become crunchy also with some sev used on the topping of the dish after you prepare it with the good touch of your hand.

How to cook poha in 10 minutes only--
1 First of all take poha or flattened rice in a bowl. Rinse it with water 2-3 times. Leave poha for only 12 seconds in normal water. Take water immediately off the poha. Give a handtouch to it and put aside for 5 minutes.
2 Take a kadhai, pour some oil in it. If the oil is musturd oil cook it for atleast 1minute. Fry raw groundnuts for 2-3 mintes and take them out of the kadhai. Add some musturd seeds in oil, let it crackle and add curry leaves in it. Then add onions which are chopped, fry it till it gets light golden colour. Add some turmaric and red chilli powder.
3 after 1/2 minute add potatoes and other vegetables. Cook it for 1/2 minute. Let the spices mingle with veggies prpoerly. Cook it with 2 tablespoon of hot water for 4-5 minutes on medium fire. The wayer will make the cooking od veggies faster if hot water is mixed in it.

4 Mix poha in the cooked onion masala in the kadhai and mix it well. Add fried groundnuts into poha. Add salt and sprincle two tablespoon of water in it. Cover it for 1 minute only.
5 your poha is now cooked completely. Add lemon juice and a pinch of sugar along with neatly chopped coriendar in it.
6 Serve it with sev and extra lemon according to flavours of your family.

1 Put cooked poha in a caseroll or hot pot. It keeps it soft for a longer time. The moisture keeps intact.
